Aug. 12th, 2023 09:23 pmI made (box) curry for the first time tonight and my poor potatoes all disintegrated bc I miscalculated the cooking times... VERY tasty though. It was Vermont curry and I put a bunch of pork tongue in :9 I think the head meats in general are shooting up my list of favorite cuts - I've loved tongue for a while now but the eye/ear muscles and the cheeks and everything are sooo good as well. I deboned a couple of pig heads at work today so I've got a nice bag of the meat in my fridge rn. (And it is just the meat this time as opposed to the whole deboned head - I don't have room for all the broth and lard that sort of project would produce lol)
There's just something about the flavor in the head as opposed to the shoulder or the hind. Or maybe it's the front of the body more generally? All I know is the flavor of the hind cuts has got nothing on the head and shoulder 🤌
Oh except for the oyster. Best part of the leg for real.
